The “Soumi Yamada Nishiki Migaki 18%” embodies the tradition and evolution of sake brewing.

This sake is brewed using the “house yeast” that has been cultivated for over 400 years. The yeast, added in precise quantities, helps create a complex, deep flavor. Additionally, the use of Masuda River’s subterranean water enhances the smoothness, making this sake a unique product only made at the Right Hand Brewery.

Method of Brewing “Soumi Yamada Nishiki Migaki 18%” is a completely new style of sake that has not been seen in previous Soumi products.
Using rice polished to 18%, delicate temperature control in increments of 0.1°C was employed to achieve the sake’s clarity.
In addition, to give the sake both transparency and a rich flavor, the koji-making process was carefully optimized using data from previous batches to produce the best quality koji.

“18% Migaki” refers to a refined process where the rice is polished to 18%, creating a sophisticated product.
By polishing Yamada Nishiki rice to this level, a top-tier flavor among premium sake categories such as Junmai Daiginjo is created. This process extracts only the core part of the rice (shinpaku), which results in a clear and delicate taste.
