Using rice polished to 18%, we carefully controlled the temperature in 0.1°C increments to achieve a crystal-clear clarity.
In addition to the transparency, we focused on creating a deep, rich flavor by refining the koji making process. Using past data, we cultivated the finest koji to ensure the perfect balance of taste.
